The "Last " Meal

So, last night I got a bit hungry and decided to use up some sweet potatoes I bought, since my spring break starts TODAY! I sliced them up to facilitate faster baking, then stuck them in the dorm's convection oven and waited. And waited. And waited. It took forever.

They didn't turn out exactly how I wanted, but it was the best I could do with a convection oven. I ate them straight up, with no condiments or anything. It was only after I ate them all did I remember I wanted to try them with peanut butter, per Evan's suggestion. Whoops, sorry Evan. But don't worry, I guarantee there will be a next time.


I'm heading off to my cousin's baby shower, then finally home. I'll probably be visiting my friend at ND for a night too. I'm looking forward to fresh food and my mom's stash of dates (I've been dying to have some, so I asked her to bring them with her to the shower, haha). I can't get enough of sweet potatoes, dates, and figs right now. You know when people ask what your "last" meal would be? Most people might answer "pizza" or "a hamburger," but mine would probably consist of the above list.

  1. I LOVE sweet taters, too...I think one of the reasons they dried out and didn't cook quickly was because you cut them too thick. When they're thinner, the outside gets crispy pretty fast but the inside stays moister. Sweet potatoes are just a pain to slice thinly, I know!!

    My last meal would probably be real Italian thin-crust pizza margherita, with about fifty chocolate desserts...yummmm :) Happy Friday!!

  2. I can't get enough of dates either! I've been having sweet potatoes as a late night snack as well too :) I love them with coconut butter and pecan butter. I actually had one with peanut butter and coconut butter last night. Also sprinkling on some cinnamon. So yummy!!! Oh goshhh my last meal would start out with latkes + apple sauce and fresh sour cream, and I'd also have a thick and creamy butternut squash soup. For the entree.. lol I'd just hit up an Indian buffet. Then dessert would be an assortment of homemade ice creams, the best slice of tiramisu ever, and some carrot cake too :D I would explode for sure lol

  3. I, of course, can't get enough of cupcakes. I guess that would be my last meal.

    Speaking of last meal, I had sweet potatoes for dinner tonight. If you cut them smaller (like fries), they'll cook faster :-)

  4. Last meal? Oh my, though question. I think I'd have to pick massaged kale salad with either roasted root veggies or a simple cooked grain. Or both :-)
