A Failed Attempt at Nut Cheese

As the semester ends, my coffers of food are pretty much empty, so I'm eating rather poorly. I had some raw pumpkin seeds from Thanksgiving that I hadn't eaten (I seem to have had some sort of aversion to them, because whenever I think about eating them, my stomach turns). I decided to make nut cheese with them, since at home, it's one of the tasty things I love to eat with flax crackers. With my guacamole fixins and a red pepper, I attempted to emulate the red pepper almond nut cheese from home.


I lovingly chopped up some red peppers and onions, added it to the soaked pumpkin seeds, and threw in some lemon juice. Then, in the mini food processor, I blended. And blended. And blended. It never really seemed to get smooth. I tasted it. Umm...yum. (and that was sarcasm) So I let it sit, hoping the flavors would meld.


About 45 minutes later, I tried blending it again, but to no avail. I decided to sit down and eat it. It wasn't that bad, but it could have been a lot better. Much better, in fact. It basically tasted like water-logged pumpkin seeds with a hint of lemon. Needless to say, I only ate a little bit and devoured the rest of the uncut red pepper. The "recipe" isn't even worth posting.

This however, was pretty tasty.


I also made some guacamole for tomorrow, when I have three finals and know I won't have time to throw anything together. What's that you say? I should be studying? Oh, I just had to take a little break... :-)


The next time I post, I'll probably be home, enjoying lots of raw food. I may or may not be able to take pictures, but I'll try!

  1. Good luck on your raw food journey. I know it is hard to eat raw when everyone else around you isn't.
